Roasted caramel is a truly sophisticated flavor combination that distinguishes our Sweet Whole Grain Rice Miso. It's particularly good in braised dishes of all kinds, but also in roasted vegetables with plain rice, tofu, or chicken. It also pairs well with dark lentils, Alb lentils, and dark whole-grain or spelt noodles. It's always available for dark marinades, but it's especially perfect for cooking during the darker months of the year.

History of creation :

Claudia Zaltenbach, author of the award-winning cookbook (miso - recipes, culture, people), told me in 2018 that she was missing a sweet whole-grain rice miso in my Black Forest MISO product line. And she was right. A sweet, full-flavored miso, as smooth as butter, the color of the most beautiful caramel and nougat, and with a wonderfully spicy, sweet flavor, with a salt content of only 5%.

Use in sweet cuisine:

For Christmas baking and in combination with salted caramel, it harmonizes with tonka bean and real vanilla. It also makes an excellent combination with chocolate for pancakes and especially crepes.

In the hearty kitchen:

During game season, it pairs perfectly with venison, in mushroom sauces, and also with nuts. It also tastes great in hearty Japanese ramen soups.
