Ingredients

We love our miso pastes, so we source only the best possible ingredients—preferably locally, whenever possible. The distance to our production site is therefore indicated in parentheses below.

We source our Bioland soybeans from the Storzeln estate in Hilzingen near Singen (20 km). For rice, we use organic Italian rice from the Po Valley in northern Italy (500 km). Organic lupins come from the Klein Bioland farm in Wertheim, near Würzburg (250 km). We source organic barley from wholesalers – from the Allgäu region (150 km). For salt, we use Luisenhaller deep salt from Göttingen in Lower Saxony – which gently extracts salt crystals from brine (500 km).

At Schwarzwald-MISO, we place the highest value on quality – therefore, we guarantee you the following:

  1. Traditional production in the Black Forest

    We produce our miso in a traditional Japanese style based on a millennia-old recipe from a Zen master.

  2. Only the best regional & organic raw materials

    Only organic soy, organic lupin, and organic barley from Germany, as well as organic rice from Italy and Luisenhaller Tiefsalz (deep salt from the Luisenhall region), find their way into our products. Our mantra: as regional as possible!

  3. Processing of whole legumes

    We only use whole fruits , meaning whole soybeans, instead of soy flour, soy press cake, or soy paste. Unfortunately, especially in Asia, the waste product from soy oil production—soy press cake—is often used to make miso. Not so with us.

  4. Natural fermentation in harmony with the seasons

    Our miso is allowed to mature in barrels in our Black Forest production facility, following traditional methods . Fermentation therefore progresses at different speeds depending on the ambient temperature. Good products simply take time. In Asia, the barrels are often heated with thermal blankets. In industrial production, maturation takes place in high-tech fermentation tanks.

  5. NO additives, GMO-FREE & radioactivity-FREE

    Genetically modified soybeans are often used in miso production in both Asia and America. Furthermore, colorings, preservatives, flavorings, and alcohol are sometimes added. Our miso, however, gets its delicious flavor solely from slow fermentation . After the nuclear disaster in Japan, more and more people expressed concerns about radiation levels in imported goods from Japan. We only use European raw materials—therefore, this issue does not concern us.
