History of creation:

In a phone call with Michelin-starred chef Benjamin Maerz from Restaurant Maerz in Bietigheim-Bissingen, north of Stuttgart, we discussed what our local cuisine means to us. And whether we could create a local miso version. Lentils with spaetzle, a local classic of good pub fare, came to mind. Since I'd already had the opportunity to experience the cultivation of Alb lentils in Lauterach on the Swabian Alb, it immediately became clear that this would be our joint project.

Seeds disappeared - the search begins:

They had been missing for a long time, but organic farmer and lentil enthusiast Woldmar Mammel never gave up his search for the Alb-Leisa, as the Alb lentils are affectionately called in the Swabian Alb region. A seed collector found the original seeds in St. Petersburg in 2006, and they were then cultivated again in the Swabian Alb region starting in 2007.
These Alb lentils are grown in a field alongside Alb buckwheat and camelina. Alb lentils are dark green and marbled, and are considered medium-sized lentils. Their flavor is intensely spicy.
