Of course! Here's a refreshing summer recipe for a cold cucumber miso soup , ideal for hot days. Quick to make, light, and full of umami and nutrients:


🥒 Cold cucumber miso soup

Refreshing, spicy & probiotic

Ingredients (for 2-3 servings):

  • 2 medium-sized organic cucumbers

  • 2 tsp Black Forest MISO (light miso, e.g. lupin MISO)

  • 150 ml cold water

  • 1 tbsp lemon juice

  • 1 tsp oil (olive or sesame)

  • 1 tsp grated ginger (fresh)

  • 1 tbsp fresh herbs (dill, coriander or mint – depending on your taste)

  • Salt & pepper to taste

  • Ice cubes for serving (optional)

Topping (as desired):

  • roasted sesame seeds

  • thin cucumber slices

  • Sprouts or cress

  • Chili oil for a little spice


Preparation:

  1. Roughly chop cucumbers (with or without peel, depending on your preference).

  2. Blend all ingredients – except the toppings – in a blender or with a hand blender until the soup is nice and creamy.

  3. Season to taste and dilute with cold water if necessary.

  4. Chill thoroughly in the refrigerator or serve directly with ice cubes.

  5. Garnish with toppings and enjoy!


Tip:

This soup is not only light and alkalizing, but also provides plenty of energy thanks to our miso paste. Ideal as a light lunch or starter on hot days!
