Refreshing, spicy & probiotic
Ingredients (for 2-3 servings):

2 medium-sized organic cucumbers

2 tsp Black Forest MISO (light miso, e.g. lupin MISO)

150 ml cold water

1 tbsp lemon juice
-
1 tsp oil (olive or sesame)
-
1 tsp grated ginger (fresh)
-
1 tbsp fresh herbs (dill, coriander or mint – depending on your taste)
-
Salt & pepper to taste
-
Ice cubes for serving (optional)
Topping (as desired):

roasted sesame seeds
-
thin cucumber slices
-
Sprouts or cress
-
Chili oil for a little spice
Preparation:

Roughly chop cucumbers (with or without peel, depending on your preference).

Blend all ingredients – except the toppings – in a blender or with a hand blender until the soup is nice and creamy.

Season to taste and dilute with cold water if necessary.

Chill thoroughly in the refrigerator or serve directly with ice cubes.
