Taste and use:
With a fresh, floral flavor, the taste of spring and summer is combined in miso. Our Violet Miso embodies the freshness of the field and the scent of the first buds in spring. We recommend it as a salad dressing, for appetizers, with asparagus, miso hollandaise, miso mayonnaise, and as a light sauce for vegetables.
History of creation:
On March 22, 2020, the German federal government imposed its first coronavirus lockdown. This emergency shutdown of the restaurant industry resulted in suppliers and producers stocking up on an enormous amount of perishable goods. Therefore, we promptly purchased a pallet of violets from the Keltenhof and brewed a violet miso. The Keltenhof donated the remaining produce, which other manufacturers and restaurateurs could not process, to the Wilhelma Zoo in Stuttgart. The finest salads and herbs for the pachyderms, chimpanzees, and animals of all kinds.
Miso butter with violet miso:
We recommend a sauce made with our miso to accompany asparagus (whether green or white). The violet miso pairs particularly well with this dish. It's also a real treat when paired with butter. Pair it with boiled potatoes and chives.
