The taste of Tuscany is evident in our Mediterranean miso paste, which offers a hint of oregano, thyme, rosemary, paprika, and garlic. It's particularly delicious when combined with all kinds of tomatoes, whether in sauces, lasagna, or pizza. It also makes a delicious salad dressing or sauce for meat or vegetables.
The application is very simple:
- For a broth: Mix 1-2 teaspoons of MISO paste with 6 teaspoons of water and add more water
- dark sauce: mix 1-2 tsp miso paste with 6 tsp water and add
- Marinade: Mix 1-2 tsp of MISO paste with 6 tsp of water and then mix with 2 tsp of oil and stir briefly.
- Salad dressing: 1 tsp miso paste, 1 tsp vinegar, 2 tsp oil, 2 tsp water
Cooking Basics | Glutamic Acid:
The fermentation of our seasoning pastes creates this unique spicy flavor and natural glutamic acid, which is also found in tomatoes and mushrooms. This makes Black Forest MISO a suitable natural flavor enhancer.
Ingredients | What's in it
Again, not much. Just German soy, Italian rice, local water, ancient sea salt from Luisenhaller, and a pinch of starter culture to start. Then, just the ripening with the changing seasons.
